If I ran a piano bar, I'd do all my own booking. All the piano acts I know do direct bookings now and then ..... some all the time. If you're interested in booking me, look at the list of my previous engagements (see how many re-bookings there are?), if you're tempted, look at my availability, if I'm free, go to the contract template and either e-mail me or call / text me on my Norwegian mobile, the number of which is +4790926456. If you don't get a reply within a day, call or text +44 77 88 464391 since I may be in the UK. If I can't do the gig, I might be able to suggest someone who can and I wouldn't send you anyone I wouldn't have in my own bar. I don't work anywhere, won't even set off to the gig, without a contract.
Advice? Book all your acts a long time in advance. Why? Well, what kind of acts always have loads of late availability? Look after your pianists and you should soon have a network of pianoentertainers who will look after you well. It also gives any acts a chance to book cheap travel / flights a long time in advance. Last minute travel can be very expensive and it's the bar that ends up footing the bill.
If you want to improve your bar, ask the piano acts you book. They should have played in loads of bars and have some idea of what will and won't work in your venue.
